My mom and dad decided they wanted to have a little get together for St. Patrick’s Day tomorrow. Really I think it was just an excuse for my dad to buy this Kobe corned beef brisket that he found at Costco. Either way we’re all in for family dinner tomorrow night. Of course I can’t go empty handed, so I decided to whip up a quick and easy batch of Lucky Charms Marshmallow Treats. If you have ever had Rice Krispie Treats, these Lucky Charms Marshmallow Treats aren’t much different. These are also gluten free which I love because my tummy is not a fan of gluten.
My husband has been super concerned all morning that these are not going to last until tomorrow. Well honey if you stay away from them we will be just fine 😉

I like to take the whole glass baking dish and turn it upside down on my large cutting board before cutting the bars. This makes for quicker, cleaner cuts. And we all know how nuts I am about things being just right.
I couldn’t resist, while my husband was out at an appointment I just snuck in the kitchen and ate two of these 🙂 and they were delicious!
