At the first home my husband and I owned, we had a huge meyer lemon tree in the backyard. I had a love hate relationship with that tree. I hated pruning it but absolutely loved the lemons that it would produce. I used to sit around on the weekends trying to come up with different lemon recipes just so I could use them. I had lemons coming out of my ears, so many that I used to take bags of them to people at work. When we moved to our current home I threatened to rip the tree out and bring it with us, but my husband wouldn’t let me 🙁 . We moved to a climate that cannot support a lemon tree and oh how I miss my tree now. Just recently we went back to the Bay Area to visit some friends. You can imagine how excited I was to peer into their backyard and their tree was full of lemons. So even though it was raining, being the good friend that I was, I sent her out to cut me a bag of lemons, haha! Luckily she loves me. Sure you can get lemons at the store but there is nothing like a meyer lemon fresh off the tree. So when we got back home (with all my lemons in tow), I set out to make some of my favorite lemon recipes. Last week some friends invited us over for dinner. We have a running joke about making brownies with this couple (I’ll spare you the details). So I thought it would be amusing to bring yellowies or as I like to call them Lemonies instead of brownies.
This glass baking dish is great because it comes with a lid and you can take it anywhere.
When sliced into squares this recipe makes (16) 2″ x 2″ x .75″ Lemonies.
